Chicken Leg Quarter Recipe

Chili Pineapple Chicken Leg Quarters

I made this last night with Coconut Rice and it was a hit! 

Ingredients
  • 3lb CJW Leg Quarters  
  • salt and pepper 
  • 2 C Chopped Fresh Pineapple  
  • 1 onion
  • Chili Powder
  • Ginger Powder
  • Dried Thyme  

Instructions 
  1. Salt and pepper the CJW Leg Quarters generously
  2. Brown the chicken slightly in a large cast iron pan 
  3. Pull the chicken and add the pineapple and onions to the pan and cook about 7 minutes until pineapple is soft 
  4. Add the chicken back to the pan 
  5. Add chili powder, ginger, and thyme to your preference about 1t each 
  6. Add enough water to cover the chicken 
  7. Put the pan in the over at 400 for 45-50min until chicken is cooked 
  8. Let cool a little and enjoy!
