
Cochinita Pork Tacos Recipe
These are the kind of tacos your kids will ask for time and time again!
Slow Cooker Cochinita Pork Tacos
Ingredients:
- 3 lb CJW pork butt roast
- Salt and pepper, to taste
- 1 tsp oregano
- 1 cup orange juice
- 1/2 block achiote paste (We get this one)
- 2 bay leaves
- Water or broth, enough to cover
Instructions:
- In a small bowl, dissolve the achiote paste into the orange juice until smooth.
- Place the pork butt roast into your slow cooker. Season generously with salt, pepper, and oregano.
- Pour the orange juice and achiote mixture over the pork.
- Add the bay leaves, then pour in enough water or broth to just cover the meat.
- Cover and cook on low for 6-8 hours until the pork is tender and easily shreds with a fork.
- Shred the pork directly in the slow cooker and let it simmer in the juices for an additional 30 minutes to 2-3 hours for extra flavor.
- Serve with sliced avocados, beans, and a squeeze of fresh lime.
