Cochinita Pork Tacos Recipe

These are the kind of tacos your kids will ask for time and time again! 

Slow Cooker Cochinita Pork Tacos

Ingredients:

  • 3 lb CJW pork butt roast
  • Salt and pepper, to taste
  • 1 tsp oregano
  • 1 cup orange juice
  • 1/2 block achiote paste (We get this one)
  • 2 bay leaves
  • Water or broth, enough to cover

Instructions:

  1. In a small bowl, dissolve the achiote paste into the orange juice until smooth.
  2. Place the pork butt roast into your slow cooker. Season generously with salt, pepper, and oregano.
  3. Pour the orange juice and achiote mixture over the pork.
  4. Add the bay leaves, then pour in enough water or broth to just cover the meat.
  5. Cover and cook on low for 6-8 hours until the pork is tender and easily shreds with a fork.
  6. Shred the pork directly in the slow cooker and let it simmer in the juices for an additional 30 minutes to 2-3 hours for extra flavor.
  7. Serve with sliced avocados, beans, and a squeeze of fresh lime.
